"The gallbladder stores and concentrates bile from the liver. The bile is then released into the first section of the small intestine (the duodenum), where it helps your body to break down and absorb fats from food."

It really depends on the person. The Dr. should be consulted but its kind of a hit and miss. Things that bothered her before, may still bother her or not. I seem to have a gallbladder problem but not caused by stones. I have had to cut out anything greasy, like sausage and eggs bother me too. No gallbladder, no way to break down the grease.

"When adding solid food to your diet, start with easy-to-digest items like toast, oatmeal, bananas, rice, and plain skinless potatoes. Continue to add foods as your tolerance allows. You should be able to eat a normal diet within a few days of your procedure."

I also read greasy foods should still be avoided. Maybe an airfryer would be a good idea. Love mine.

She will have some immediate discharge instructions for the next few weeks as part of her discharge papers; review them.

This question, thereafter, is for discussion with her MD. Each patient is unique and much has to do with overall condition and dietary needs. Some few patients have problems with diarrhea after removal of the gallbladder. Many sees their overall tolerance much improve. Your mom will have MD followup and she should avail herself of nutrition consult if needs.
The internet is a wealth of good information as well.

This would be a question for her doctor but...
After my gallbladder removal
I tried to do low fat, low animal protein and higher fiber. And it was suggested a diet low in sugar (yeah, like that happened!)
Talk to the doctor possibly ask for a consultation with a dietitian to come up with a good meal plan or at least a list of foods to avoid, and ones that will be alright.
